The perfect roast chicken


Ingredients for 4-6 people


  • 1 whole Karagiannakis Poultry chicken (1.400g – 1.500g) 
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper
  • Fresh thyme or oregano

Pat the chicken dry. Liberally salt and pepper the chicken inside and out. Place it in a cooking bag and leave it in the fridge for at least 2 hours. Remove and brush well. You should let it out for about 15 minutes to reach room temperature. In a bowl, mix the butter with the olive oil and thyme. Preheat oven to 200°C. Tie the legs and wing tips together with kitchen string to the body of the chicken and place it chest up to a rack resting on a griddle. Roast for about 1½ hours. After the first 30 minutes, lower the temperature to 180°C and let cook for an additional hour. While roasting, brush a couple of times using the butter mixture. Remove the chicken from the oven and let it rest for 15 minutes before serving. Serve with salad, baked potatoes or grilled vegetables.
