Chicken livers with Metaxa brandy


Ingredients for 4 people


  • 400g Karagiannakis Poultry chicken livers
  • 4 green onions, chopped
  • 2 tbsp olive oil
  • 50 ml Metaxa 5*
  • 1 tbsp butter
  • Juice of 1 lemon
  • 4 sprigs of thyme
  • Salt and pepper

Pat dry the chicken livers with a paper towel. In a deep frying pan, add the olive oil and when hot, add the chicken livers. Salt, cover and let stand for about 7 minutes, with the lid on. Add the onions and stir. Add the Metaxa and wait for a few more minutes until tender. Add the lemon juice, butter and oregano. Cook for a few more minutes until the sauce thickens. Serve with toasted bread.
